Instructions
In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes or until the quinoa is tender and the broth is absorbed.Remove from heat, fluff with a fork and let it cool.In a large bowl, combine the cooled quinoa, red onion, tomatoes, feta, parsley, mint, lemon juice, olive oil, salt, and pepper.Stir gently to combine.Chill for at least 30 minutes before serving for best flavor.
